Banana Bread

A few days ago I had a hankering for banana bread.
It hasn't gone away.

That same day my friend Nat pinned this recipe
for banana bread made with applesauce and honey
instead of oil and sugar.
YUM!

So tonight,
while Spencer is at the Cervo's
babysitting sleeping baby M,
while I stay here with our sleeping baby
I whipped up the loaf of delicious banana bread.

Ingredients

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar free applesauce
  • 3/4 cup honey
  • 2 eggs, beaten
  • 3 mashed overripe bananas

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Thankfully I had my own canned applesauce on hand.
It contains honeycrisp apples and water. Nothin' else, so I know its good.
To my flour mixture I added chia seeds, flax seeds and hemp hearts. 
All have amazing benefits and you can add them to almost anything.
Atop salads, in yogurt and mix them into recipes like this one or your favourite bran muffins.

It is in the oven right now,
so I cannot attest to the flavour.
But if I can judge by the way my home smells,
I'd say it is a success!
